- 食鹽,又稱餐桌鹽,是一种矿物结晶,主要成分为氯化钠。是人類和动物生存必须的物質,但过量的情况下也会对动物和植物造成损害。盐是最古老最广泛的調味料,用盐腌制也是最早的保存食物的方法。咸味是舌头对盐的感觉,是基本味觉之一。中国有句俗话:“开门七件事,柴、米、油、盐、酱、醋、茶。”
- 盐在历史上是非常重要的商品,主要来自海水蒸发和盐矿开采。常见的食盐有精盐、海盐和碘盐。氯化鈉(化學式NaCl)的含量均在99%以上。某些食鹽品種中,會添加碘、硒或者其他的微量元素,以改善當地人群對某種重要元素的缺乏。世界大部分的地区通过添加碘的碘盐来预防碘缺乏病(大脖子病)。
